Todd was born and raised in Iowa. After high school he joined the US Army for a four year tour. He then moved to Florida after military duty and started cooking in hotels and country clubs, eventually becoming the Executive Sous Chef at a restaurant on the gulf coast specializing in seafood and steaks. After ten years in the Sarasota, FL area, Todd moved to Atlanta, GA to further his culinary career and work in some of the finest restaurants in the area specifically the Abby which was a Michelin star restaurant. He decided to take his culinary knowledge back to Iowa and open a restaurant called PHAT DADDYS in his home town which got a lot of exposure of being a large city type of restaurant in a town of two thousand. After serveral years in Iowa, he decided to go back south to Sarasota to work and found that he really enjoyed the country clubs’ culinary challenges and pleasures. Todd moved to Lawrence four years ago and has worked at the top hotels. Creating a relationship with some of the local farmers in the area really inspired him to continue his culinary career in Lawrence, thus going back to what he loves the most – country clubs.
